Weather for a light taste — The Month of Frost

Like a large chrysanthemum flower blooming in a bowl, a graceful and gentle work of shrimp and potatoes. After simmering a crab broth, and pulling out the colour and flavour (umami) by lightly frying, in the center of this “flower”, like the “dew of a chrysanthemum”, is the luxury of snow-like mitsubishi crab. Chrysanthemum and crab–the playful look and taste of the season–intensifies the fullness and flavour. Unexpectedly, the mouth relaxes: a restless evening.
